So it has been established that I absolutely LOVE avocados. I stumbled across this recipe for Avocado Compound Butter, courtesy of Alton Brown and Food Network. Compound Butter? What in the world is that?
Compound Butter isĀ simply butter that has flavoring(s) or other ingredients mixed in. Have you ever had garlic butter, herb butter, or cinnamon butter served with bread at a restaurant? These are all compound butters, but it’s not just for bread. Depending on the other ingredients – and individual tastes – these butter combinations can be used to flavor meat, vegetables, pasta, and yes, breads.
Since we have been making the shift from highly processed foods to those in their more natural state, I have been using real butter more often. With that said, I have also reduced the amount of butter we use in general, only because fresh foods require less, in my opinion.
I eat avocados almost every day, which is why this recipe was so intriguing. I plan to use less cilantro than the recipe calls for, as my better half doesn’t like it much. This will be great on sandwiches as a replacement for mayo.
Even though avocados have a high fat content and butter is, well, just fat, I feel it’s a healthy alternative to many sandwich spreads and butter substitutes. Bon Appetit!
